Two Top Chefs Appointed at Singita

Singita has appointed two experienced new executive chefs at its South African lodges.  Archie MaClean will be overseeing the culinary experience at Singita’s two lodges in the Kruger National Park (Singita Lebombo Lodge and Singita Sweni Lodge); while Scott Rattray will be heading up the kitchen at Singita Boulders Lodge (Singita Sabi Sand).


Archie MaClean has carved an impressive career, which includes working with international master chef Dietmar Sawyer at award-winning Australian restaurant Forty One, and alongside acclaimed South African chef Margot Janse at The Tasting Room at Le Quartier Français in Franschhoek.  He launched his culinary career at The Nutfield Priory Hotel & Spa in Surrey, England where he completed his apprenticeship under Michelin-starred celebrity chef David Evans. His impressive resumé also includes stints at the luxurious Gleneagles Hotel in Scotland (a member of The Leading Hotels of the World), and a twelve month tenure at the Asara Wine Estate and Hotel in Stellenbosch, before taking up the reins at Singita Kruger National Park.


Scott Rattray counts among his many achievements and accolades being named runner-up in the prestigious Sunday Times Chef of the Year competition 2010, and being invited to accompany BBC TV Celebrity Chef Keith Floyd on a four-month tour of Southern Africa in the 1990s. After graduating with his National Diploma in Hotel Catering and Institutional Operations at Norwich City College, in Norfolk, England he cut his teeth at the iconic Claridges Hotel in London, part of the renowned Savoy Group, where he worked with Head Chef John Williams, from 1993 to 1995.   Scott is co-owner of the very popular Chef Scotty’s Restaurant in Pletternberg Bay, for which he and his partner, were awarded the Sunday Times Entrepreneur of the Year Award in 2008. He is also the creator of Fresh Ideas, a company that grows fresh farm produce, as well as catering for large events and private functions. No stranger to game lodges, he spent ten years working as Executive Head Chef at CC Africa (now &BEYOND Africa), also acting as Group Training Chef, before taking on the position of Lodge Manager at Phinda Mountain Lodge, in KwaZulu Natal. He previously gained insight into the Singita experience when he spent six months at Singita Lebombo Lodge (Kruger National Park) in 2009 as Interim Executive Chef.
